I was reading Cooking Light this evening and they have a recipe for Mushroom, Barley, and Beef Soup. The recipe calls for 12oz. of beef stew meat. I have a small rump roast in the freezer that I'd like to consume before too long. Would this be an OK substitute?
It's supposed to rain in So Cal off and on this week so a pot of soup sounds perfect.
