I'm making Beth Hensperger's banana bread and have no sour cream for it. The recipe calls for ¼ cup with 2 bananas and 2 cups flour. No yogurt, either. No cottage cheese, none of the usual suspects.
I've seen that softened cream cheese + milk (blended) can be used in dips. Do you see any problem using this in my bread recipe? I'll be making it in my bread machine, but don't think that should matter. The recipe does call for 2 eggs.
Any other suggestions? I have milk, cream, eggs, butter and cream cheese, plus pantry staples.
