Stupid Chutney Tricks

OK, I'm going to reveal my ignorance -

Just had a WONDERFUL weekday lunch buffet at Minerva (Fairfax) - it's been on my list since someone posted so enthusiastically about it.

The poster said "use the chutneys, use the raita" - I've never quite understood how one was supposed to "use" them. Certainly not mixing them with the curries ... I've always just dipped a corner of bread into a chutney or raita and used it to "cleanse the palate" between spicier tastes. Am I doing the right thing, or is everyone in a turban secretly laughing at me?

And, by the way, I was floored by dishes I'd never seen on an Indian menu, let alone a lunch buffet - and MULTIPLE chutneys??? Wow!
