Stuffed Peppers Other Than Bell?

I make basic stuffed peppers with ground beef and rice. I mostly use bell peppers, usually green, but have also used red but I find them a bit too sweet. I've also recently used, what are called aroung here (suburban NYC), Italian frying peppers. They were good too but I'd like to mix it up. What other pepper varietes can I use? I'm thinking something Mexican or Asian? I generally bake them in Italian red sauce but I'm thinking maybe a red or green enchilada sauce would be appropriate for a Latino style dish? Any recipes would be appreciated. Thanks!
