Stuffed peppers

I'm wondering if I can use polenta instead of bread in the stuffing mix with chicken (corn, green chilies, etc.) for a baked stuffed red pepper dish (with a cream-added red enchilada sauce).

Any advice?
Any recipe?
Do I still add an egg?
Do I cook the polenta first?
What should I do?
