stuffed grape leaves with meat, continued

I've been fascinated by the difficulty Simon and those trying to assist him have been having as they try to locate stuffed grape leaves with meat in them. It had never occurred to me that they were a rare item. I found some yesterday at the Pita Express in the food court at the State of Illinois Center (100 W. Randolph, probably open only weekdays during work hours). Or thought I found some. It turned out they were out yesterday but asked me to come back today for some "fresh made." I did. They were very good, with the rice cooked but not mushy, something red and moderately spicy (hot paprika? cayenne?) pepping them up. Six of them come with a salad, a piece of pita, and a tub of tzatziki for $3.99.
On the other hand, I think the meat in stuffed grape leaves should be lamb, and these were beef. My mom's, which she learned from her cook in Turkey, are what dolmas should taste like. I've posted her recipe on the general board and link to it below. My mom grows her own grape leaves, but the ones in the jar work just fine.
