Stuffed eggplant at Sultan's Market

Recently I was picking things up at Sultan's Market for a picnic at Ravinia, and I noticed that May had again the jarred stuffed eggplant, stuffed among other things with walnuts. They are quite delicious...I'd like to see her start carrying them on a consistent basis, so try some and let's create demand. I would buy them more often, but Himself is mildly allergic to eggplant and wildly allergic to walnuts, a main ingredient in the stuffing.

May had also expanded some of the choices on her salad bar and I had some really nice rice-stuffed eggplant, as well as some simply cooked zucchini.

Someday I'm going to get her to let me watch while she toasts the cooked ceci. They are so simple, but so good.
