I would like to try to make stuffed acorn squash. My plan is to first roast the squash (for how long ?) cut-side down, and then stuff it with some shiitake and/or oyster mushrooms, craisins, and basmati rice.
A couple of questions...
For how long should I roast the squash?
Do I cook the rice all the way, before adding to the squash? The directions say to cook the rice for about 40 minutes. Should I cook it for less time (or not at all) if I plan to stuff the squash with it, and then bake the whole stuffed squash??
Finally, do I neeed to pre-cook the mushrooms, or do I just stuff them in the squash and bake?
Sorry for all these silly questions, but I want this to work, and don't really know what I am doing!!!
