I made a great concoction this summer with parsley, sea salt, olive oil and garlic in the food processor. I put this sauce? salsa? marinade? in a large shallow bowl and when the steaks came off the grill I threw them into the bowl. The residual heat and meat juices brought everything together.
Definitely one of the best steaks I've made. (Works well with chicken too). You really taste the parsley. Probably nothing new, but it was new to me. I even converted a vegetarian with it. (Admittedly he was never a strict one anyway...)
Wanted to get some ideas from you all on other possible combinations for this? I'm well aware of the various steak sauces, worcestershire etc. (I've had great success with fish sauce, hot pepper and a little vinegar by the way.) More interested in herbs and spices that can be brought together with the residual heat from the meat.
