Sorry this post is late but I went out of town right after our July 18th dinner. Here goes!!!
What do chowhounds dream of when they are not dreaming of food?? Well for me it would be eating one of the best meals of my life and being able to question the chef about what you are eating and he truly enjoys answering and sharing ALL his techniques for cooking. Shola made that dream come true--not only was the meal superb--Chef Shola was a joy!
The Menu--Yukon Gold Potato,gruyere onion souffle,white
truffle and parmesan broth--very light,just a hint of potato not overpowered by the gruyere cheese. Spring pea soup garnished with some tuscan ham,mushrooms,duck confit, truffle ragout and a circle of Parsnip puree--this was one of my favorites esp. when Shola told us he didn't use any dairy products in the soup(it tasted so good that I was sure that alot of cream and butter had been added).The color of the soup was the brightest green outside of Ireland--he said that he accomplished this by adding watercress and parsley. It tasted wonderful! Next came the Black Bass roasted in fennel salt,it sat on top of a lovely crab,apple and fennel salad in a meyer lemon and miso sauce(I'm still waiting on that poll about licking your plate in public--it sure could of came in handy about then). Dessert-- a warm chocolate souffle sitting in the middle of a bowl of sweet cream of peanut soup with a scoop of Mascarpone Chocolate and white pepper sorbet(that left a bite in the back of my mouth--I liked the feeling).Heavenly--when you cut into the souffle a puddle of liquid chocolate oozed out.
Second part of dream--great dining companions that also like to talk about food--Herb,Charlie and Bill always a pleasure. Kathy B- 1st outing but hope to see you at future DDC dinners. Tom(blueschef) loved listening to you and Shola discuss food and cooking with such passion and respect for each others knowledge--can't wait for cajun. Holly(almost didn't recognize you without your grease stains) it is a joy to finally meet you --I've had some good chow from your recommendations. Let us know when you make your celebrity debut on Ch 12.
