Struggling with two dinner choices

Going to Vegas for family celebration and have been considering several potential choices for two dinners. We will have 11 people (all adults) prefer really well executed food, great service, fun energetic room yet not over the top noisy where table conversation is impossible. No real limit on cuisine or price point except unlikely to try the $150+ per person choice this trip unless the recommendations from this board are so compelling as to require it. We would like the two dinners to be somewhat different (not two steakhouses for example).

So, we are considering:

Charlie Palmer Steak
aureole
Sage
Le Cirque
Twist
SW Steak
Bouchon (considering for brunch more so than dinner)

I'd sure appreciate some timely advice as to what people's recent experiences have been at these or others.
