Can I make "strombolis" with puff pastry a day in advance?

I've got guests coming for dinner. Between my family and theirs, we've got four adults and five kids, all with a variety of eating preferences (straight-up meat eaters, vegetarians, picky eaters, etc.). I'd like something I can make in advance so I can spend my time socializing rather than cooking. So I thought about "strombolis" in puff pastry (basically goodies rolled up in thawed puff pastry sheets and then baked). I figured I could make them single-serving size and do some ham & cheese, some broccoli and cheese, some turkey and cheese, etc.

I haven't worked with puff pastry a lot. Can I make these (i.e. roll them up) the night before, keep them covered with plastic wrap, and then bake them the next day? Will the pastry still be okay?
