Off strip restaurants in Las Vegas near Summerlin

We are staying at Red Rocks and interested in getting out and about to off strip restaurants. We'll have a car so traveling around town isn't necessarily a problem. We've always stayed on the strip so this will be our first real Vegas adventure. Love to get recommendations on some upscale, some lunch stops and some great local food (ethnic cheap eats whatever) - really anything that you all love. We are foodies and open to anything. We'll probably do the buffet at RR one time (because weirdly enough I love a good buffet....) but otherwise want to get out and about!
