Served on spongecake??? Them's fighting words. The meaning of "shortcake" is a biscuit-like pastry. That's not to say that some folks don't use sponge cake as the base, but it's debatable to suggest that it's the "usual" way the dish is served.

Edited to add: here is my favorite recipe from Genius Kitchen, https://www.geniuskitchen.com/recipe/.... These shortcakes are huge. I often make 6, rather than 4 from this recipe.

I have a "drop biscuit" recipe that is quite similar - add sugar and it makes a nice go with berries.

just thought there might be other ideas/thoughts...I'm going to experiment with a (thickish) sweet crepe thing this year.

Had several biscuits left over from Easter dinner that I popped in the freezer. Just tonight I was lusting after strawberries to pair with them. Soon!

also lady fingers or amaretti cookies set up with whipping cream as a faux-trifle.

No specific recipe to give, I always freestyle my rhubarb sauce as my plants just keep on growing- I keep getting good stalks into August

Try a vanilla bean pound cake instead...or make it really interesting by adding fresh finely chopped herbs like thyme, rosemary, basil or mint. To make it extra juicy, spread homemade strawberry jam or drizzle strawberry sauce on the cake before laying with sliced berries,

I usually use more strawberries and reduce the orange zest (or leave it out entirely). I do sometimes add a squeeze of lemon to the strawberries.

Similar to Marion Cunningham's cream biscuits or scones. No cutting in the butter. An even quicker path to shortcake. I've used her recipe before, it made a great strawberry shortcake. Self rising flour would be even quicker..... need to write this down.
