I am making lemon cupcakes with a Strawberry lemon curd filling and want to frost them with a strawberry frosting. I had a recipe I was going to use but since these will be in a basket and will be sitting out for a few hours and the recipe was to use cream cheese but since that needs refrigeration I do not know if the other version of the recipe with just butter will work or is their a great butter cream icing recipe I can make. I already have 1/4 cup strawberry puree with a it of lemon juice along with some finely chopped pieces of strawberries. I want to use this mixture in the frosting to make it have a great strawberry flavor with real chunks of strawberries.
The original recipe is ...
2 sticks of butter or 1 stick and 8oz of cream cheese
1/4 cup strawberry puree
3-4 cups of powdered sugar
Beat the butter and cream cheese then add puree.
Slowly add sugar till you get the thickness desired.
So would this recipe work with just the butter or do I need a whole other recipe.
