strange-looking tomalley

I recently cracked open a three pound lobster in a restaurant in City Island, NY, only to find that the tomalley was not green but a beige, almost oatmeal-like color.

I did not eat the tomalley, though the rest of the lobster seemed fine. Any ideas on why the tomalley was this color? I cannot find any explanation online.
