Hi all, I’m wondering if anyone can explain the differences between rolling out pasta by hand using a straight mattarello vs a mattarello that tapers toward one end. Is one better than the other? Does each require a different rolling technique? I am familiar with the technique using a straight pin but I know some use tapered pins and I can’t find any information about why and what the differendss may be.
