I'm looking to buy my first pressure cooker. I'm eyeing the Kuhn Rikon stovetop model.
I wondered if it would be feasible to allow the source of heat for the pressure cooker to be my oven. I have an Aga -- the top oven is about 430F and the bottom is 310-320F, making it ideal for braising. After the initial browning/sauteing stages, which would be done on the stovetop, could I place the pressure cooker in an oven? If so, around what temperature would be ideal for it to reach high pressure and remain there?
