Storing Cooked Grains

Saucyknave | Jul 30, 2002 09:12 AM

I just read in "La Terra Fortunata" that in the Carnia and Natisone Valleys, it was traditional to make a pot of polenta to be used throughout the week and to hang the pot from a rafter to keep out of the way of animals or young children. Does cooked polenta survive being stored out of the refrigerator for a few days?

Related to this, I understand that basmati or jasmine rice can be stored out of refrigeration for a day, but how long can it be stored that way. And is this true of other rice as well?

Would there be other "starchy" foods that this would be true?
