Storing Buttermilk Soaked Chicken

I committed to frying up chicken strips for a birthday party on Sunday. The problem is that I bought way too much chicken and now have a ton of chicken breast that has been cut into strips that has been soaking buttermilk for a forty eight hours.

My thought is to rinse the buttermilk off the chicken, pat it dry, and vacuum seal it. It would then go in the freezer. Does anybody see anything wrong with this method?

Also, recipe ideas would be appreciated. I've got about five pounds of chicken breast to use up.
