storing baked goods for sale

We're having a bake sale at work on Tuesday and I would like to do most of the baking this weekend since I won't be available Monday night. I have always baked the day of and storing for another day has never been an issue until now. I plan on making a peach coffeecake, a chocolate banana loaf, lemon squares and brownies. Can everything be kept at room temperature in an airtight container until Tuesday if I bake it on Sunday or do I need to refrigerate any of it? Will the freshness be compromised because I'm making it beforehand? Should I skip making anything because it won't survive? I would hate to donate anything stale! TIA for any insight!
