Inspired by another thread, I realized that there IS a wrong way to store coconut milk.
Only one end of the can can be opened with a can opener. That's the end that should be stored "up". Because, the heavier fraction rises to the top and you want to use that fraction with the curry pastes to 'fry' the paste on your way to making many Thai curries.
Yes, it drives my husband bonkers to see cans stored with the labels upside down. But he loves Panang Chicken so much that he's getting used to the cattywampus can labels.
