How do you store your bacon fat?

autumm | Aug 6, 201508:23 AM     21

With BLT season getting started here (Finally, I'm in MN!), I'm cooking more bacon, and I want to save as much of the fat as possible for other tasty applications. I bake the bacon on racks over a foil lined pan so I can drain the fat into a storage vessel. Right now it's in a silicone prep bowl, but that only holds about a cup, and we have BLTs once a week, so I'm going to run out of space quickly.

So how do you store your bacon fat for longer term storage, and do you just pour the "fresh" stuff on top, or do you rotate your stash?
