I just made this up and it was really good:
1/2 of a pineapple cut into cubes.
3 T sugar
1 T hot sauce (or less, to taste)
3 T peanut oil
1 T spiced rum
1 T balsamic vinegar
2 T heavy cream
Combine first three ingredients. Stir fry mixture in oil until sugar begins to caramelize. About 3 minutes in a hot wok.
When done, turn off heat, add rum and vinegar, stir to mix. Put into serving dish and top with cream.
