Best Non Stick Pan for Eggs that you can use a 'metal utensil' on

This is a serious question so please refrain from any snarky comments ;-)

I love cooking and have had a #1 rule of never using metal on any of my non stick pans. So I was a bit odd when I saw this Jacques Pepin Video in a recent NY times article and he is using a metal fork on what looks like an anodized pan.

It got me thinking if this is something we could consider doing? My gut instinct still screams now and it goes down the line that we should use a bamboo or wooden fork....

What do you guys think, since I really want to try his method compared to what I am doing currently.
