I laughed when I saw J Kenji Lopez-Alt do his frittata in a De Buyer Carbon steel pan - he's a very good chef as far as I know.
We can all make mistakes, even skilled chefs - but I lauhed out loud, when this happened, when he tried to turn his frittata onto a plate:

I think it tells you something about the chef, that he still chooses to not cut this out of the video.
The frittata was stuck to the bottom of the so called non stick carbon steel pan, which is all black and looks very well used and very well seasoned.
This would not happen in a non stick pan, which is why I make all my frittatas in my Demeyere Alu pro ceramic non stick pans - they just work 100% of the time.
Carbon steel doesn't work 100% of the time and neither do stainless steel pans in my experience, when it comes to frittatas.
Just thought this was funny after reading the thread about non stick stainless steel pans used for eggs. Let me tell you - if you can make a frittata in a stainless steel pan without it sticking to the bottom, you're a chef worthy of a Michelin star LOL
