I know you can eat the stem/stalk that the head of broccoli comes on. I just take a veggie peeler to the stalk to get some of the tough outside off, cut into "rounds" and toss in with rest of the crown. Cooking time and flavor pretty much the same.

During a brief stop at supermarket yesterday, noticed they had whole stalks of small Brussels sprouts. Price of stalk (maybe 15-18" long) was same as those normal little containers (with cellophane and rubber band) of slightly larger ones.

First thought was there HAS to be at least 50% waste... maybe more. Second thought... can ya EAT the stalk like with broccoli??
