What might cause a steak to be flavorless?

I was out at dinner on Saturday night and ordered a filet minon cooked medium rare to share with a friend. The meat came out with a nice char and was pretty and pink on the inside. It looked tasty. But it didn't taste tasty. It tasted like...nothing. The mouth feel was right, tender and not chewy, but it had almost no flavor. Why would that happen? Does that occur when meat is frozen too long? I'm curious...TIA
