Where to stay in Southern France?

I'm doing a trip to Southern France in September and will be flying into Montpellier. I plan to do 2-3 nights there, but would like to do a gite or b&b for about a week. Important factors for me are:

-a place within walking distance (2km) to town/restaurants
-quaint town with less tourists than average
-great restaurants and wineries nearby
-We love Grenada, Spain; Montepulciano, Atrani, Mount Etna Region Italy (Near major tourist areas, but a little less traveled.) I didn't like Sienna or Taormina as well, too many tourists.

My husband speaks French fluently and we will have a rental car. I realize I'm asking about a large area, but am very flexible in where we end up! I'd like to spend Around 100 Euro per night or less.

Any help you could provide would be much appreciated!
