Starch with roast pork

Hoping hounds can help once again. I will be serving roast pork to friends for a fall birthday dinner--Julia Child's dry brined pork loin roast (bone-in) with salt/garlic/thyme/bay leaf rub--and need a starch side, preferably one that requires a minimum of last-minute hands-on time (so risotto is out). Will probably pair it with roasted fall vegetables, mix of carrots, butternut squash, golden beets, maybe parsnips. I was thinking of a potato grain, or potato-fennel gratin, but am leaning away from the heavy creamy-cheesy prep. Any ideas?
