Help! I bought a 5 lb standing rib roast to cook for Christmas Eve dinner. This morning I seasoned it with salt, pepper and garlic and have it uncovered in the refrigerator and had planned on cooking it tomorrow morning. I just found out the dinner will be postponed until Monday evening. This is my first time cooking a rib roast and wanted to know if leaving the roast in the refrigerator for three days uncovered and seasoned is okay. I am going to cook it slowly on low heat. Any advice would be greatly appreciated!!
