What do I do with this squash?

I bought a squash from the farmer's market mainly because I was enchanted with its mysteriously knobby beauty...

The farmer saw the delicata squash I had in my hand already and said that if I liked those, I'd love galeux d'eysine. So I bought one... And now I don't know what to do with it, lol.

I haven't been able to find many (*any) recipes for galeux d'eysine specifically. Does anyone have any helpful hints as to what I might do with it? It's awfully lovely, but I kind of just want to eat it now.
