Need spring-y, make-ahead, fancy-schmancy menu help

Okay, so I'm cooking for a friend's shower/bachelorette party. Actually, I'm cooking for the time in between those two parties. Here's the deal - we're going to this place called the "Chocolate Bar" for the shower. It's exactly what you're expecting - more chocolate than you've ever seen congregated in one room before. So, clearly we'll all have gorged ourselves on chocolate and are probably going to be slightly ill, but maybe wanting sustenance a bit later in the day, especially because the Bachelorette party is that night and yes, that will involve much drinking.

That being said, I want to make something:
(1) nice (for about 10 people),
(2) light (I think I want it to be light... any thoughts??? Maybe we'll want a gigantic steak! Any experience in post-chocolate food consumption???)
and (3) make-ahead-able - I'll be at the shower in the early afternoon and will not have long to prep before people come over in the early evening.

I was thinking of a cold poached salmon, but the bottom line is that I'm being selfish and I just don't like salmon that much. :-) Any thoughts would be really welcome!
