For Christmas I'm thinking of bringing a spinach roulade for the two people who don't eat land-based meat. I want it to be special and to replace the entree so I thought of filling it with a mixture of green onions, mascarpone, sun dried tomatoes and cooked shrimp; roasted red pepper sauce on top. Any thoughts on this? Anyone have a thought on a spinach roulade in general? I'm up for considering a vegetable filling suggestion, but absolutely no mushrooms (sigh) nor salmon.
