Spicy Sesame Noodles (Ramen) @ Hana, San Jose

Last week I finally made it to Hana to try the handmade, Chinese-style noodles aka ramen. It was a warm day, so I skipped the version with pork soup and focused on a cold style.

Shown below are the cold spicy sesame noodles, $6.95. The slightly sweet dusky seasonings in the sauce were very complex and deep as well as very spicy hot. The taste was richly round and complete. Topped with a mound of red oil-tinted garlic paste, some crushed roasted peanuts, a dash of white pepper, and slivers of cucumber, the handmade noodles were fantastic. Silky and slippery in texture, they were cut in varying widths and bounced with each bite.

As it sat, the fire of the chili oil overtook the overall balance of the dish. Otherwise, this was just about a perfect rendition earning it the #12 slot on the rankings. I can't wait to try the other combinations here.
