Spicing: let the chef decide?

I brought this up in reference to a Sripraphai post, but it made me wonder what people think of this idea: assuming that you can handle essentially any level of spiciness at, for example, Sripraphai, do you think it would work to have them spice it the way the chef thinks it tastes best? At great steak places, they don't give the option of how well you want it done because they believe that the chef knows how it would taste best, and I am curious about how that would work with spiciness. Any thoughts?
