i love indian (subcontinent, not native american) food, and i've done some cooking of it in my home. problem is that every time i go searching for new recipes, i discover that there are more and more spices that i need. i don't have the inclination, to say nothing of the room, to buy tons of spices that i will use somewhat sparingly, but i do want the basics, by which i can make a wide variety of dishes (i already have a few curry powders, some turmeric, mustard seeds, and garam masala; tho not a spice, per se, i can get ghee and yogurt). basically, i'd like to end up with 10 or so more "essential" spices. thanks in advance.
