You Spice up My Cider...???

We're having a big "picnic" dinner for the whole neighborhood the week after next. Along with soda, beer and wine, I'd like to serve coffee and warm apple cider in case it gets a little chilly that evening.

I plan to make it earlier in the day, rewarm it, and then pour it into a rented, 50 cup coffee service (server). I'd like something not too spicy, and non-alcholic so the kids could enjoy too. I guess it all starts with the cider? Do I have to buy pasturized?

Any suggestions/recipes would be greatly appreciated.
