Need some specific guidance on Tokyo (higher end creative, izakya, and uni)

Going to Japan in November for my 40th, been a couple of times but it has been quite a few years. I'm not particularly fussed about Michelin or going to the most popular places, prefer neighbourhood joints and lower key establishments, but I am looking for a couple of particular things to flesh out my itinerary:

1. I do want to splurge on my 40th, but will be with my wife who is not a sushi fan, so I am looking for creative, interesting high end but not super minimalist. Basically what tasting menus have knocked your socks off recently? Doesn't have to be the hottest new place, can be an under the radar spot, budget doesn't matter. (Only turn 40 once!) I will be specifically in Tokyo for my birthday.

2. Looking for an Izakaya or similar establishment that has great grilled or fried fish

3. Looking for any restaurant, be it izakay or not, that has some interesting uni preparations that arent sushi, Ive seen an izakaya that does uni kind of stir fried with watercress for example in a recent japan food drama. Willing to go anywhere within reason in Tokyo, Kyoto or Kanazawa area for this and the grilled fish izakay.
