Looking for special restaurants for V-day weekend

My husband and I are planning a romantic 3-day trip to NO (first time for Ed) valentine's day weekend. I've been reading up on the latest and greatest but am still unsure of the best bets. I am more adventurous than my husband, but whether the places are more traditional or eclectic, we both want to find upscale, elegant and romantic places -- especially for Valentine's day. The places that seem to come up again and again are:
- Bayona
- HerbSaint
- Galatoire's
- Upperline
- Brightsen's
- Peristyle
- The Bistro (at Maison de Ville)
- Rene Bistro
- Cobalt
- Restaurant August

We managed to get reservations at Bayona (Saturday night) and August (Monday-V-day). However, both nights we had to settle for very late (9 and 9:30 respectively). Also, the more I'm reading, the less I'm inclined to stick with August -- I'd like that night to be really special/romantic. Also, we can't find a place that fits the bill AND is open on Sunday night. Finally, two of the most talked about places(Peristyle and The Bistro) sound lovely, but frankly, we've got a lot of great french bistros in NYC, and were hoping for something that highlights local ingredients and cooking styles -- even if they don't follow closely/exactly the creole and cajun traditions.

Any suggestions/comments? Should we opt for other places that can take us at 8:00 or should we just get a drink and appetizer some other places and wander over for a later dinner? Thanks in advance!
