Special Christmas dinner for two, vegetarian?

Ideas?

I've done lots of different things in the past, just looking to see if anyone's got any especially interesting ideas they've heard about recently. I've also read (and in some cases started!) most of the old threads.

I'd like one really nice appetizer, a main, a vegetable side, and then a dessert. I've done butternut squash lasagna, I've done a big middle eastern feast, i've done spanish tapas (too much work for only two people!).

So, any new ideas?

(Oh, and we hate bell peppers. Lots of vegetarian recipes use roasted red pepper, and they give me indigestion! )
