A special brunch menu - seeking advice

In a week+ I am hosting my friend, her recently married son and his bride for a brunch to celebrate the start of their life as a couple. They all love (cold) smoked salmon so that is going to be the star but I am struggling with the rest of the menu. There is so much talent and creativity in this group, I am confident in getting the best advice ever!

Here is what I am thinking.
To start:
- Bubbly to toast the couple - straight, mimosa or royal. Would cranberry juice be more interesting as a seasonal flavour rather than OJ?
- A nibble to go with the bubbly - ?

Main:
Smoked salmon slices
Bagels or English muffins?
Whipped cream cheese
Eggs - poached? Devilled? Over?
Crushed potatoes or roasted wedges
A plate of lettuce, cucumbers, tomatoes or Israeli salad?
Condiments- capers, red onion slices

Dessert:
Pavlova?
Japanese Cheese Cake?
Plum Cake?
