I have been working on the menu for my gourmet club's fall cocktail party and came across a recipe for a seafood and watermelon ceviche. We will have it made with just scallops because we are having other seafood on the menu the recipe calls for 1/4 lb. each of shrimp cut into 1/2" pieces and the same of lobster. This is supposed to serve 6
It says to to peel and remove the pith from a navel orange and cut the segments free of the membranes, then chop enough segements to measure 1/4 C. Mix the chopped orange with 1/2 C. orange juice, 1/4 C. lime juice, and a 1/2 C 1/4" dice watermelon. Then add to that 1 1/2 Tbs. diced red onion, 2-3 tsp. minced jalapeno and 1/2 tsp. salt.
Cut 3/4 lb. of sea scallops into 1/2" pieces. Poach in salted water just about a minute, transfer to a bowl of ice water to stop the cooking. Drain and pat dry. Add to the watermelon with 1 1/2 Tbs. chopped fresh mint and chill well.
