Tonight I fixed spaghetti squash for the first time and was surprised by how good it is. This is the world's weirdest vegetable to prepare, but when you get it on your plate (covered with tomato sauce and grated Parmesan) it looks exactly like spaghetti and gives the very strong impression that you are wolfing down a pasta dinner. Only 1 cup of cooked spaghetti has 220 calories and 43 grams of carbohydrate, while 1 cup of cooked spaghetti squash has 42 calories and 10 grams of carbohydrate. A winner.
