So, I've been having a craving for spaghetti with whole clams (not spaghetti with clam sauce). I just picked up two dozen littlenecks. Does anybody have any tried and true recipes? I have a bunch of cookbooks spread out here with recipes that look good (Zuni's, Tyler Florence, Nigella's, Giada's, Hazan's). Has anybody tried any of these, or have any fantastic recipes or tips to offer? My benchmark renditions here in Boston were at No.9 and Umbria with fresh homemade pasta. I'm specifically looking for something similar - the type of sauce that's not too soupy, where the pasta soaks up the salty-clammy goodness but doesn't get mushy, no tomatoes, something garlicky-lemony. I also found one on Epicurious (picture below). Thanks in advance! I'll post on results.
