What are the various Southern regional cuisines?

Doing some extensive googling before I posted this, I soon found that most critics and restaurants alike tend to refer to "Southern cuisine" as if it was a monolithic structure with a single identity. How could that be true? At a glance, there's the Low Country, Appalachia, the Gulf coast and Mississippi Delta, the Tenessee and Kentucky uplands, east Texas...

So what are the recognized culinary regions of the South, what defines each, what are signature dishes of each, and, if any exist, what might be some definitive on-line authorities?
