Southern US College Road Trip Restaurant Itinerary Help/Questions

Hello fellow Chow Hounds. I'm hitting the road in late March to do the grand college tour. Going from Raleigh / Chapel Hill (Duke, UNC) along I85 to Atlanta (Emory and Georgia Tech) with stops at Charlotte / Lake Norman / Mooresville (Davidson) and Anderson / Clemson along the way then up I75 to Nashville (Vanderbilt). (North Carolina, South Carolina, Georgia and Tennessee - adding these for future Chowhounds searches)

I have a tentative food itinerary pasted below, any input welcome! My aim was for good/CHEAP(er) eats that highlight BBQ and other local fare. This is a bit of a wish list - not sure we'll actually make all these places with our timing, but I want to have good places in my back pocket. Some of the choices are necessitated by a tight timeline of hitting up more than one school in a day (i.e. why we are eating on Duke's campus Monday - so we can rush over for a UNC tour afterwards).

A couple of explanatory notes: We're hitting the town the night before the visit so dinner the night before and lunch the next day are in the same town. Oh, and yes, we are doubling back to Charlotte after seeing Clemson on Tuesday - has to do with open houses and when we could get tours.

Still looking for:
Place for lunch along I77 in WV in Charleston / South of Charleston
Place along I85 between Charlotte and Atlanta - preferably closer to Charlotte - for lunch on Wednesday
