I'm planning to have a steak for dinner today, and since I'm a bit short on time today, I prepared it sous vide at 58 C yesterday. However, before going to bed, I put the meat into cold water (without opening the bag), planning to move it into the fridge, but forgot it in the water on the counter.
Would you eat this meat? I was thinking, since it's been sealed, then cooked at 58 C for hours, then the harmful germs would be dead already when I went to bed, and that germs don't simply appear out of nowhere. Is this right? Or would there be enough germs left in the meat after the sous vide to be of any real danger?
