I just got an Anova sous vide immersion circulator. My Latino market has huge stockpots, all sizes for $20! I bought one (32 qts.) cause not sure if I'll be back there anytime soon. Logic tells me that the size of the pot shouldn't matter. It will take longer to heat up but at that point the water is continually circulating. Right? They did have a 24 qt. It's very appealing to be able to do something quite large. Any thoughts about this? TIA.
