I want to cook a couple of steaks in a sous vide setup at home, then take them over to a friends place to grill. I'm pretty new to this and have been following recipes strictly because I worry about safety. So I've been eating pretty much immediately after taking out of the water bath.
Would I be looking at trouble to take the bags out of the bath and leave them unopened for a half hour before searing on the grill? What's the best way to handle this? Take them out and chill them?
